Before taking a look into the differences of single coil pickups and double coil pickups we need know there are primarily two different types of pickups. They are magnetic picks which is where single coil and doubles coil picks are categorized. The other common pickup is piezo electric pickups.
Piezo comes from the Greek word meaning to squeeze. The piezo pickup reacts to vibrations rather than a flux in the magnetic field. In the past the piezo pickups were made of ceramic material however now they are mostly made of polymers. As these pickups work with vibrations and not a magnetic field they will work with any type of strings such as steel, nylon or gut. The string used does not matter. Mostly the piezo pick is used on acoustic guitars being installed in the bridge.
The magnetic picks tend to be broken into two categories: The single coil pickup, and the double coil or humbucking pickup. Magnetic pickups gain their magnetic fields most commonly from two styles of magnets. There are pickups that will have a magnet that is a rod that will be attached to the base of the pickup, while other pickups achieve magnetism from pole pieces. Pole pieces are magnetic cylinders that come out of the pick and in some pickups adjustments can be made to strengthen the sound of the string.
Magnetic picks tend to use three types of magnets: Alnico II, Alnico V and the Ceramic. Each of these magnets can be generally associated with a type of sound. The Alnico II is known to give more of a bottom end sound; it's bassier and warmer. The Alnico V is a higher output pickup with more treble and more midrange. The Ceramic this has a very high output with a very high treble and midrange sound.
The first pickup that was created was in fact the single coil pickup. This was a mammoth invention at the time bringing the guitar player to the foreground of modern music. As the guitar became more popular the drawback to the single coil pickup became more evident. While being able to amplify the guitar signal when not being played there was a terrible hum that came from the guitar. The hum was caused by RF signals. The interfering signals could be caused by items such as radio signals, transformers and even fluorescent lights. It was discovered that you can change the phase or signals of the pickups by changing the direction in which the wires were wrapped around the pickup. If the wire was wrapped clockwise you would get a different signal from the pickup if the wire was wrapped counter clockwise, thus giving birth to the double coil pickup or what came to be called the humbucking pickup. The humbucking name was coined because when you put two single coiled pickups together the RF signals would cancel each other out ending the hum problem that plagued the single coil pickup.
This new style of pickup inadvertently gave birth to a new sound to guitars. The single coil pickup still is in wide use today. The single coil pickup has a cleaner or brighter sound. There is also less output on the single coil in comparison to its brother, the humbucker. The double coil or humbucking pickup tends to have more power and will have more bottom end or a bassier sound. Which pick is better is a matter of personal choice. Both of these picks have advantages and disadvantages.
